HEART OF HOUSE (HOH)

DATE PREPARED: June 2020

REPORTS TO: Assistant General Manager

FLSA STATUS: Non-exempt

POSITION PURPOSE

The Heart of House position creates legendary experiences for guests through the production of all Buffalo Wild Wings (BWW) food menu items. The role consists of multiple stations, inclusive of Chip, Shake, Grill, Southwest, and Expo.

RESPONSIBILITIES

  • Complies with all specs, quality standards, safety requirements and department rules and procedures
  • Diligently follows safety requirements and models behavior that protects them and others
  • Maintains high standards of cleanliness and keeps a sanitized and orderly environment in the HOH o As needed: empties trash, cleans and sanitizes food contact surfaces and temperature-controlled equipment (refrigerators, freezers, steam tables), washes dishware and kitchen equipment, sweeps line, deep cleans as assigned, etc.
  • Organizes and stocks each station following FIFO guidelines. Label with use-by dates
  • Assist other stations as needed
  • Stays current on all federal, state, local and company required training and certifications
  • Other duties as assigned

Kitchen Stations

  • Cooks and prepares food on all stations according to recipes, build posters, and timing standards
  • Plates food with attention to detail and according to standards, utilizing appropriate quality indicator stickers
  • Follows all safety guidelines for food handling, time and temperature control, and cross-contamination avoidance
  • Preps/portions items according to need, following all recipes/specs and label with use-by dates
  • Utilizes KDU to monitor incoming orders, prioritize items when needed, and bump orders once dish is complete
  • Maintains the fryers and quality of shortening/oil throughout shift and skims, polishes, filters, and dumps fryers based on the filtering schedule

  • Ensures ovens, oil, hot holding, refrigerators, and freezers are all at the proper temperature
  • Tracks all waste on waste sheet throughout shift

Outside Expo Station

  • Communicates between the kitchen line and front of house (FOH) to ensure the coordination and smooth flow of quality products being produced and served to customers
  • Quality checks food presentation, adherence to recipes and order accuracy, paying close attention to any noted special requests/modifiers and allergies
  • Uses functions in KDU such as ticket time tracking, prioritize ticket, prioritize order, combine tickets, change, and spy screens to manage orders
  • Monitors tickets times to ensure they remain within standards. Takes corrective actions when standards are not met
  • Completes final presentation of all products, including adding celery/carrots and dipping sauces (e.g. ranch, blue cheese, etc.) to the plate up
  • Trays orders according to pivot point ordering system
  • Bags takeout orders according to standard, including proper bagging/packaging techniques and takeout checklist use

KNOWLEDGE/SKILLS

  • Knowledge of proper sanitation, food safety, RAS and security procedures
  • Strong verbal communication and interpersonal skills
  • Skill in time management and organization with attention to detail
  • Ability to take direction and execute team and BWW objectives
  • Capacity to follow specific service time and guidelines
  • Ability to maintain a high degree of pace and intensity for an extended period of time

EDUCATION/EXPERIENCE

Required

  • Minimum 16 years of age (or higher per applicable law)

Preferred

  • Prior experience working in a restaurant or customer service role

PHYSICAL DEMANDS

This position requires frequent standing, sitting, bending, reaching, moving, stooping, stretching, and lifting in a restaurant environment.
