Job Summary

This position exists to prepare and portion menu and nourishment items so that meal service will be complete and efficient. This position will also perform routine food service tasks including food preparation, serving meals to the college community, dishwashing and cleaning the food service areas while following established food service policies and procedures.

PRINCIPLE RESPONSIBILITIES AND RESULTS

  • To assemble meals in the main campus cafeteria, prepare and portion menu items and nourishment items, so that meal service will be complete and efficient.
    • Follow weekly menu and extended menus.
    • Stock service areas with appropriate supplies and food items.
    • Follow daily production sheets, menus, and extended menus to prepare food items as directed.
    • Portion and serve foods prepared by cooks according to the daily menu, and extended menu.
    • Cover, label and date all prepared food items.
    • Be familiar with clientele and serve appropriate portions, including modified foods for special diets.
    • Return remaining food to proper storage areas and store in correct manner after preparation and service is completed.
    • Report obvious reactions of the college community and staff to foods served, either acceptance or rejection, to Cook Coordinator and/or supervisor.
    • Daily reconciliation of cash register: Oversees the cash register operation to ensure that any shortages or errors are investigated and corrected and sales figures are accurate. This is done by monitoring employee(s) who handle cash receipts, process charged sales, refunds, or adjustments as needed in accordance with appropriate procedures; close out entries to reconcile.
  • To prepare and portion menu items and nourishment items so that meal service will be complete and efficient.
    • Follow production sheets and observe menu, making sure they coincide with each other and accurate counts.
    • Keep area fully stocked.
    • Prepare alternate menu items; canned fruit, sandwiches, etc.
    • Accuracy: Ensure accuracy with all tasks.
    • Rotation: Stock, special menu items, refrigerator storage, FIFO.
    • Special events/functions.
    • Proper storage of leftovers, label and date.
    • Answer telephone and coordinate with cooks and runner or communicate with supervisor if runner is needed.
  • To follow and maintain standards of sanitation so that meal preparation and service can be free of contamination.
    • Maintain good habits of personal hygiene. Wash hands frequently and avoid touching face.
    • Follow proper procedures for handling various food items. Wear gloves when having direct contact with food.
    • Keep work surfaces clean.
    • Clean equipment after use. Cover equipment when not in use.
    • Keep potentially hazardous food in the temperature danger zone for as little time as possible.
    • Report to a supervisor any foods that do not meet established standards of temperature and quality.
    • Cover, date and label leftovers. Store properly. Dispose of according to department procedures.
    • Clean dishes.
    • Follow proper procedures while working in the dish room and with soiled equipment.
    • Ensure temperatures reach proper levels before running equipment through dish machine and record temperatures.
    • Ensure that all equipment is properly air-dried before putting away.
    • Follow procedures and schedules for cleaning work areas and equipment. Sign cleaning sheets after completing work.
    • Take and record food temperatures prior to the start of service.
  • To deliver and retrieve food in a safe and timely manner, so that meal service is predictable.
    • Follow proper procedures for loading and unloading carts and delivering and retrieving food to designated areas and aerospace site.
    • Deliver and retrieve food to various areas throughout campus.
  • To follow and maintain standards of safety so that injuries are avoided.
    • Work in a manner that will reduce or eliminate injuries. Keep floors clean and dry. Wipe up spills immediately. Remove obstacles that may cause injuries.
    • Dispose of cracked or broken dishes after telling supervisor. Use proper lifting techniques; required to lift up to 50 pounds. Report all injuries immediately and complete proper forms.
    • Report equipment in need of repair immediately.
    • Utilize correct chemicals and personal protective equipment for each cleaning task. Follow facility procedures in the event of fire or other emergencies.
  • To observe departmental policies and procedures so that meal service can be timely and dependable.
    • Be punctual in reporting for work as scheduled. Be present in work area at the start of your shift.
    • Follow posted daily work schedule.
    • Give advance notice for absence from work.
    • Know and follow work assignment and know duties of position.
    • Work in a pleasant, congenial manner with the college community, staff and guests and maintain good working relations with coworkers.
    • Follow time keeping systems procedures correctly.
    • Perform other duties as assigned by a Cook Coordinator and/or supervisor.
  • To maintain clean and organized storage areas and work areas so that items will be easily located.
    • Assist with storage of grocery and supply deliveries; not only in the kitchen but also in your areas.
    • Rotate groceries and supplies, utilizing the FIFO (First In, First Out) method.
    • Dispose of boxes and loose bags, etc. in the proper fashion following dietary procedure.
    • Store groceries and supplies in their consistent locations.
    • Properly return any unused items to correct area.
    • Check dates before using.
    • Maintain cleanliness in refrigerator and cabinets.
    • Maintain ample stock in area and watch expiration dates.
  • To participate in staff meetings and training activities so that the facility and staff can benefit from improved knowledge.
    • Learn departmental performance standards.
    • Participate in in-service training programs as scheduled.
    • Participate in problem-solving discussions.
    • Attend mandatory in-service training programs scheduled by the college.
    • Attend any scheduled department meetings.
  • Perform other duties as assigned to ensure the smooth functioning of the cafeteria and maintain the reputation of the organization as a viable business partner.
QualificationsMinimum Qualifications
  • Basic knowledge of food preparation.
  • Customer services skills sufficient to communicate with customers, employees, and others to answer questions, explain information, take orders and address complaints.
  • Must have ability to learn and carry out facility procedures for regular diets.
  • Must be able to read recipes, menus, and tray tickets and take and write down messages and perform other reading and writing tasks.
  • Dexterity is needed in the performance of duties in the kitchen and dish room.
  • The ability to independently organize and prioritize what needs to be done and discuss concerns with supervisor.
  • Must be able to lift up to 50 pounds or greater with an assisted device or co-worker's help.
  • Ability to bend, stoop and stand for long periods at a time is needed.
Preferred Qualifications
  • Ability to collect payments, count money and make change for customers.
