Join us for this incredible opportunity at Hyatt Regency Dallas, which is located downtown next to the iconic Reunion Tower. The Culinary Lead will direct and oversee line level colleagues on culinary tasks and performances, check quality of finished food products, utilize proper knife skills, and ensure efficient preparation methods and procedures in our pastry shop. The ideal candidate should have knowledge of hotel kitchen operations and skills to be able to work in all kitchens, such as specialty restaurants, three-meal restaurants, banquets, saucier, butcher, and must have basic skills in the pastry shop. The Culinary Lead will support the Pastry Sous Chef in the pastry shop’s operation and should be capable of assuming the responsibility of the pastry shop in the absence of the Pastry Sous Chef. Ideal candidate must be passionate & excited about food with a desire to pursue leadership roles in the culinary profession.

Additional responsibilities:

  • Receiving products from the storeroom
  • Utilizing the proper storage procedures per the Chef de Cuisines guidelines
  • Preparing daily specials
  • Ensuring the proper amount for needed food preparation
  • Support in the supervision, training and development of the culinary team
  • Assist in the monitoring of payroll cost and overtime

Qualifications


  • 4 years of culinary experience and pastry experience is preferred
  • Culinary degree or related hotel experience preferred
  • Previous supervisory experience preferred
  • Experience in a high volume restaurant required and experience in banquet operations strongly desired
  • Possess higher awareness level of hotel business, handle and communicate business matter in a responsive manner, such as scheduling, planning, and preparing for efficient productivity
  • Flexibility to work any days of the week, including weekends and holidays
